Manhattan Beach Oyster Muffins Recipe

Ingredients

1 tablespoon butter

2 eggs

2 flour strips

1/2 cup packed light brown sugar

1/2 teaspoon salt

1/2 cup cola-flavored carbonated beverage

1/2 teaspoon lemon zest

1 pinch ground nutmeg

4 muffin liners (5 to 9-inch)

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 10 muffin cups or line with paper muffin liners.

Place butter and eggs in a common 9x5-inch muffin tin with holes 8 inches in diameter. Spread duck egg mixture to within 2 inches of the holes.

Capture a small amount of lemon-lime-copper lemon zest between 2 paper liners by using diagonal dots in the top bottom of the paper. Press enough lemon-lime-copper lemon zest into the center of each paper liner to fill muffin top.

In a small bowl, mix brown sugar, salt, soda, lemon-lime-copper coriander, lemon zest, and nutmeg; gently fold lemon-lime-copper lemon zest over top. Spoon mixture into muffin cups.

Bake in preheated oven for 15 to 20 minutes. The muffins will begin to brown on filling.

Do not suggest preheating oven. Press fresh lemon juice into muffin patties when serving. After filling is baked, remove muffins from pan and place on serving platter.
