2 tablespoons olive oil
1 pound smoked salmon, skin removed
1 tablespoon cider vinegar
1 1/2 tablespoons chopped fresh parsley
1 teaspoon salt
1/8 teaspoon white sugar
1 tablespoon dried minced onion
1 tablespoon minced clove garlic
2 teaspoons white sugar for garnish
Place the olive oil in a large spoon and dredge in the marinade. Place salmon in the olive oil; cover marinade and bring to a slow boil. Cover heat and cook 10 minutes on low.
Add the vinegar and parsley to the pan and pour over the salmon. Sprinkle with salt and sugar. Bring to a slow boil, then reduce heat and simmer 8 minutes, stirring constantly, until sugar is dissolved and flavors are well blended.
Discard parsley and garlic and season with white sugar. Sprinkle salmon with garlic salt, white sugar, parsley and parsley garlic salt, then sprinkle with remaining parsley and garlic salt.
