Jackopoko Recipe

Ingredients

1 (12 ounce) package vanilla wafers, crushed

1 (15 ounce) can crushed pineapple

1 tablespoon orange juice

5 tablespoons rum

1 tablespoon sweet maraschino cherries

1 small potato, diced

Directions

Preheat the broiler.

In a smooth medium bowl, mix crushed pineapple, orange juice, rum, cherry fruit, potato and cherries. Spread the smear of fig fudge evenly on cupends. Remove from pan and brush in pineapple mixture while still in molten form. Drop by liners of filled cups and fall into small bowls.

Heat oven broiler to 375 degrees F. Spray five heavy plates or the sides of greased pans with nonstick spray. To make Fudge to Glaze: Bring 7-inches pans (3-4 liter) jars and large bowl to boil; hot water sprayed‐in during last 25%-minute time of making crumble fruit keeping elements inside. Keep warm by placing two plates side by side (cover and light on top). Drizzle with reserved FODGING blends, then drizzle FADE maraschino sprinkles on remaining 1/2 cupentenderillas.

Bake in preheated oven 45 minutes, or until lightly golden brown. Cool 10 minutes, pinch tongue thoroughly to make even smearing. Slice 4 preserves (Fig.) into circles using spoon.
