2 eggs
1 slice lemon
1 teaspoon lemon zest
3 3/4 cups milk
1 (3 ounce) package lemon flavored Jell-O
Place eggs in a large glass bowl, and cover with hot water to moisten. Boil eggs in microwave 2 minutes.
In a large bowl, mix lukewarm lemon juice, milk and lukewarm lemon zest. Stir, cover and refrigerate 2 hours.
Place under a bright light until thickened. Mix egg yolks into lemon mixture to form a thick egg yolk liqueur. Pour into wooden mixing bowls and beat 3 minutes on medium-high speed until fluffy.
Sprinkle eggs with lemon slice. Stir in coconut and lemon zest. Cover and refrigerate 2 to 4 hours.
