2 1/2 cups butter, melted
1/4 cup white sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 cup fresh pineapple
1 cup sliced pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 2-quart round baking pans. Stir together butter and sugar. Cut in 1/4 cup of the flour to make a small crumb mixture. Stir in the vanilla extract. Press mixture into prepared pans.
Bake in preheated oven for 1 hour, or until a toothpick inserted into middle of each pan comes out clean. Cool on wire rack. Cool completely before cutting into squares. Store fruit in plastic bag in refrigerator.
