1 (4 pound) whole chicken, skin removed and meat tenderloin bone removed
1 tablespoon olive oil
1 small onion, cut into strips
2 teaspoons salt
1 teaspoon ground black pepper
4 green onions, sliced
salt and pepper to taste
Heat oil in a skillet over medium heat. Cook chicken until brown, then close oven and set chicken on paper towels or wire rack. Reduce heat to low and add onion and salt and pepper.
Simmer about 20 to 25 minutes. Remove chicken from refrigerator 10 to 15 minutes before serving
