1 teaspoon dried minced onion
1 teaspoon dried minced celery
1 teaspoon dried minced sliced mushrooms
1/2 teaspoon dried crushed red pepper flakes
1/2 teaspoon dried parsley
8 ounces spaghetti
1 1/2 pounds lean sausage, cut into 1 inch pieces
4 ounces shredded California mozzarella cheese
In a large pot, combine onion, celery, mushrooms, crushed red pepper flakes, parsley, and spaghetti. Place over medium heat, and cook for 20 to 25 minutes, stirring frequently. Boil uncovered for 10 minutes, stirring constantly. Stir occasionally, reduce heat to medium-low, and stir in pasta, sausage and cheese. Reduce heat and simmer for 5 to 20 minutes, stirring occasionally. Stirring with hot pasta and cheese, cook 30 minutes more. Reduce heat to low.
