Mara's Roast Chicken Recipe

Ingredients

2 boneless, skinless chicken breast halves

4 boneless chicken breast halves, cubed

2 tablespoons vegetable oil

15 cloves garlic, minced

1 cup vegetable oil

1 onion, sliced

3 cups zesty tomato sauce

1 (10.75 ounce) can red wine

1 tablespoon soy sauce

1 teaspoon white sugar

1 tablespoon yellow mustard

Directions

Preheat oven to 400 degrees F (200 degrees C).

Place chicken in preheated oven for approximately 1 hour, making sure that it is completely browning. Transfer chicken into a lightly greased 9x13 inch baking dish.

In a mixing bowl mix oil, garlic, onion, tomato sauce, wine, soy sauce, sugar and yellow mustard. Spread over chicken.

Bake uncovered 30 minutes in the preheated oven, turning chicken chicken every 10 minutes; do not brown. Reduce heat to 325 degrees F (165 degrees C), and bake an additional 20 minutes. Remove chicken from oven, and immediately place in oven for 10 minutes, until chicken is cooked through and no longer pink.
