1 teaspoon lemon zest
1/2 teaspoon salt
1 cup butter, softened
1/2 cup white sugar
1 egg, beaten
3 1/2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons dried oregano
1 teaspoon dried basil
Sift together the white sugar and flour; set aside. With a wooden spoon, stir the egg into the flour mixture until just moistened. Stir in the remaining 3/2 cup of flour. Mix in salt, pepper, oregano and basil. Spread the dough about 2 inches apart onto the prepared cookie sheet.
Bake in the preheated 375 degrees F (190 degrees C) for 12 to 18 minutes. Then butte and check for doneness with a metal spatula.
