1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 1/2 teaspoons vanilla extract
1 cup flaked coconut
1 (3 ounce) package instant coconut cream pudding mix
1 teaspoon lemon zest
1 (3 ounce) package instant lemon pudding mix
1 (3 ounce) package instant vanilla pudding mix
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the cream cheese and sugar. Mix in the vanilla extract and coconut. Stir in the coconut cream pudding mix, lemon zest and lemon pudding mix. Pour the mixture into the crust.
Bake in preheated oven for 30 minutes, or until toothpick inserted in center comes out clean. Allow to cool.
