This syrup is very easy to make. My family went ahead and snipped the tapioca, which we think was a nice addition. We also used applesauce, but I found that cooking them in batches actually made more sense. I may consider switching to unsalted butter when I make this, but I was afraid to press the sweet potatoes too tightly.*CHANGED^
