Cocktail Poppers Recipe


3 tablespoons fresh lemon juice

3/4 cup kirsch liquor

1/4 cup sugar

1 teaspoon lemon zest

8 ounces large citrus, sliced

salt and pepper to taste

1 cup vegetable oil

2 eggs, beaten

1 1/2 teaspoons vanilla extract


Heat oil in a medium bowl. Dissolve lemon juice in water. Mix in kirsch, sugar, lemon zest and citrus slices. Mix together; pour over chicken.

Heat egg yolk mixture in a medium saucepan over medium heat; stir continuously until all ingredients are heated. Heat oil in a large heavy skillet over medium heat. Stir chicken, lemon juice mixture and egg yolk mixture in oil. Simmer between 2 and 4 minutes, or until chicken is lightly browned.

Vani's famous Pendleton Recipe

1 quart water

4 quarts red wine

1 pinch crushed steel-cut lemon zest

3 1/2 tablespoons lemon juice

1 1/2 quarts orange juice

1/3 cup peach juice

1 gallon vodka

2 orange sherbet cubes, orange slices and brown sugar

1 cup cherry pie filling

1 1/2 tablespoons bittersweet chocolate syrup (optional)

1 cup crushed ice

In a small saucepan, combine water, red wine, lemon zest and lemon juice. Stir in orange juice, lemon sherbet cubes, lemon juice and peach juice. Bring mixture to a boil over medium heat, then whisk into red wine mixture. Cover saucepan with aluminum foil and refrigerate for at least 1 hour.

To serve, strain orange sherbet cubes and syrup into a wide glass bottle. Pour half into each glass, filling two thirds of the way up the sides of glass. Top each drink with cherry slice.
