2 1/2 cups all-purpose flour
1 (8 ounce) can diced, seeded potatoes
1 (10 ounce) package frozen mixed vegetables, thawed
1 cup diced celery
1 cup chopped onion
1/4 cup diced green bell pepper
1/4 cup diced celery, chopped
1/4 cup chopped green bell pepper
1/4 cup diced red bell pepper
1/4 cup crushed red pepper
1 cup sliced mushrooms
1 cup chopped green onions
1 cup chopped celery
1/4 cup Italian seasoned bread crumbs
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch pan.
Place croquettes in greased pan. Top with onion and peppers; sprinkle with celery, bell pepper, celery, red pepper, mushrooms, green onion, celery, bell pepper, celery, red pepper, mushrooms, green onion and celery mixture. Layer with stuffing, bread crumbs and cheese.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until chicken is cooked through.
