1/2 pound zesty Italian sausage, casings removed
16 slices cooked ham, diced
1/2 cup vegetable oil
2 onions, diced
1 tablespoon dried oregano
1 cup fresh spinach, washed
1/2 cup sliced fresh mushrooms
1 medium tomato, diced
1/2 cup sliced green onions
Slice the zesty Italian sausage into 1/2 inch slices. Heat the oil in a large skillet over high heat. Turn the toasted sausage slices so that slices are thinly sliced. Cook 1 hour. Drain oil, and return to heat.
Stir sausage into skillet, and cook, stirring often, for 10 minutes, or until well coated. Remove sausage from skillet. Stir in the onions, oregano and mushrooms, and spoon mixture onto sausage slices. Top with tomato slices and mushrooms. Spoon zesty sauce over all.
