1 (18.25 ounce) package yellow cake mix
1 (18 ounce) can pineapple juice
1 (2.5 ounce) package instant lemon pudding mix
1/4 cup milk
1/4 cup vegetable oil
1/4 cup white sugar
3 egg whites
2 tablespoons vanilla extract
1 1/2 cups shredded strawberry
3 drops green food coloring
Prepare cake according to package directions, using pineapple juice as the cup. Sprinkle pineapple with pudding mix, place on top of cake. Beat milk, oil and sugar in quick-cooker or by hand until stiff. Add egg whites and vanilla extract; beat until incorporated. Spread over pineapple. Beat cake mixture with green food color until evenly coated. Cover. Refrigerate until serving.
