1 cup butter
1 cup packed light brown sugar
3/4 cup vegetable oil
1 egg
1 egg, lightly beaten
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Melt butter or margarine in a large bowl, beat brown sugar and oil together. Stir egg and flour into brown sugar mixture until well blended. Beat in flour, baking powder, baking soda and vanilla. Drop by rounded spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
