2 1/2 cups white sugar
1 egg
1 1/3 cups boiling water
1 teaspoon lemon zest
2 teaspoons almond extract
3 teaspoons distilled white vinegar
3 tablespoons vegetable oil
2 tablespoons vegetable oil
2 tablespoons honey
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, mix sugar, egg and boiling water. Stir in lemon zest and almond extract. Beat until smooth. Then, mix in vinegar and oil. Beat until mixture is thickened. Mix in honey and lemon zest. Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
