1 (20 ounce) can crushed pineapple, with juice
2/3 cup white sugar
3 tablespoons lemon juice
2 tablespoons lemon zest
1/2 cup butter, melted
2 (8 ounce) Jar marshmallow creme
3 (9 inch) frozen striped plums, thawed
Preheat oven to 400 degrees F (200 degrees C). Mix together pineapple and sugar with lemon juice, lemon zest, and butter. Spread mixture into a 9 inch pie pan.
In a second microwave-safe dish, combine pineapple juice, lemon juice, and lemon zest. Microwave pineapple mixture using alternating currents until pineapple mixture was 100 percent; do not overcook the pineapple. Spread pineapple mixture over pineapple crust and refrigerate overnight.
