3 ripe ripe pears, sliced
3 sliced zucchini, peeled and cut into small wedges
2 large carrots, peeled and chopped
3 large cucumbers
4 large mushrooms, sliced
3 tablespoons vegetable oil
3 tablespoons molasses
1 teaspoon ground black pepper
1 (16 ounce) can bread crumbs
Preheat oven to 350 degrees F (175 degrees C).
Place pears in shallow baking dish and roll, but do not sift. Coat with vegetable oil. Stack 3 cucumbers, carrots, pears, zucchini and carrots into the mixture. Sprinkle in molasses, pepper and breadcrumbs. Pour the mixture over the cucumber, apple, onion and tomato tops. Mix gently.
Bake in preheated oven for 30 minutes, or until carrot tops are golden and juices run clear and peaches are tender. Cool completely.
