Award Winning Dishpan Cookies Recipe

Ingredients

12 1/2 inch pan cookies

1 tablespoon vegetable oil

2 tablespoons white sugar

1 teaspoon baking soda

1 1/2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup peanuts

1 cup raisins

Directions

Preheat the oven to 375 degrees F (190 degrees C).

Heat the oil in a large bowl. Stir in the sugar, lemon juice and baking soda and mix until smooth. Gradually stir in the flour, continuing to stir until no streaks remain. Mix in the lemon juice and vanilla until smooth. Mix in the flour mixture until well blended. Stir in the raisins and pecans. Drop by rounded spoonfuls onto ungreased cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool completely on the baking sheet before removing to a wire rack to cool completely.
