1 2/3 cups white sugar
1/4 cup vegetable oil
1 cup granulated sugar
1 egg
2 tablespoons vanilla extract
2 teaspoons lemon extract
1 cup packed light brown sugar
1/2 cup lemon juice
1 cup butter, softened
1 cup chopped walnuts
1 1/2 cups confectioners' sugar for dusting
Combine white sugar, oil, granulated sugar, egg, vanilla extract, lemon extract and brown sugar. Blend well.
Place butter or margarine, lemon juice and brown sugar in a medium bowl and whisk to dissolve. Spread mixture in the bottom of a greased cookie sheet. Sprinkle with lemon mixture. Dust with crushed walnuts.
Dust with confectioners' sugar. Place 1/2 cup of cookie mixture on one half of the cookie sheet. Do not set cookie against the cookie sheet, spread into pan, and refrigerate for at least 1 hour.
