1 pound chicken breasts, cut into pieces
1/2 cup sliced mushrooms
1/2 cup sliced onion
1/2 cup sliced green bell pepper
1/2 cup sliced red bell pepper
1 teaspoon dried sage
1 teaspoon dried basil (optional)
1 teaspoon dried thyme
1/2 teaspoon coarse salt
2 tablespoons chopped fresh parsley
3 cloves garlic, minced
6 slices smoked bacon, cut into wedges
Place chicken pieces in a large resealable plastic bag; seal bag and shake to coat.
Melt bacon in medium skillet over medium heat. Brown chicken pieces on both sides and place in bag with mushroom, onion and green pepper, sage, basil, thyme, salt, parsley and garlic, seal bag, shake and chill to insure even cooking. Serve over chicken in bowls.
