1 (9 inch) pie crust, baked
2/3 cup butter
1 cup white sugar
1/2 cup quick cooking oats
4 eggs
3 teaspoons vanilla extract
1 slice fresh pineapple
1/4 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Line a 9 inch pie pan with foil or aluminum foil.
In an electric blender, combine butter, sugar, oats, eggs, and vanilla until smooth. Pour mixture into prepared pan.
Bake in preheated oven for 25 to 30 minutes, stirring once.
In a mixing bowl, beat together pineapple, pecans, pineapple juice, pineapple preserves, pineapple preserves, pineapple juice, and pineapple preserves. Spread evenly to within inch of foil.
Place pie baking dish in microwave oven, microwave on medium for 30 minutes, stirring every 5 minutes.
