2 pounds lean pork
2 cups mild celery sauce
1 tablespoon soy sauce
1 teaspoon white sugar
5 onions, sliced
2 cloves garlic, minced
salt and pepper to taste
ground black pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Place marinated pork in shallow roasting pan, partly opaque. Pour celery sauce over pork body, giving the body a deeply marbled look. Cover and place in oven roasting rack.
Bake 15 minutes in the preheated oven, turning earlier every 5 to 6 minutes as necessary in case walls of oven become blackened.
Place pork in middle of oven roaster, while remaining in roasting rack. Raise oven rack (or pork rack) to medium height.
Bake 20 minutes in the oven, turning oven 120 minutes per hour. (Be sure be wary of liquid bubbles in oven if you are using a Dutch oven.)
Turn oven off. Place pork on rack and brush with celery sauce, wrapping around completely.
Bake 10 minutes in the oven, or until browned. Serve pork with celery sauce and celery glaze.
