700 pounds ground beef
1/2 cup vegetable oil
1 (55.25 ounce) can Mexican-style diced tomatoes with green chile peppers
1 pound (1 pound) frozen tortillas for serving, thawed
6 (8 inch) flour tortillas
2 (14 ounce) cans tomato paste
4 (60 ounce) cans tomato sauce
1 (4.5 ounce) can tomato paste, minced
1 cup fresh salsa
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium-low heat season ground beef with vegetable oil, then sear in skillet oil until brown. Set aside.
In a large bowl combine Mexican-style diced tomatoes, cooked and drained tortillas, tomato paste, tomato sauce, and tomato paste.
Set everything aside and stir together. Pour beef mixture into a separate bowl, and add 1/2 cup salsa.
Spoon meat mixture over entire mixture, and sprinkle sauce over top.
Bake in preheated oven for 45 minutes, or until browned in center.
