1 1/2 quarts chicken broth
1 (12 fluid ounce) can or bottle red wine
1 (8 ounce) can honey mustard
2 tablespoons white sugar
3 tablespoons lemon juice
2 tablespoons white vinegar
1/4 teaspoon paprika
1 teaspoon salt
3 cups seasoned dry bread crumbs
In a large saucepan, bring 1 cup chicken broth to a boil. Reduce heat, cover and simmer for 10 minutes.
In a small saucepan, combine wine, honey mustard, sugar, lemon juice, vinegar, paprika and salt. Bring mixture to a boil, stirring constantly. Add chicken, stirring constantly. Reduce heat and simmer for 20 minutes.
Remove chicken from saucepan and transfer to platter. Place chunks of chicken on top of each other, cover with sauce mixture and sprinkle with bread crumbs. Serve immediately.
