Coconut Cream Pie IV Recipe

Ingredients

2 eggs

1/2 cup vegetable oil

3 large ripe bananas

6 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

2 teaspoons coconut extract

1 teaspoon lemon extract

3 tablespoons chopped walnuts

3 tablespoons butter

1 tablespoon brown sugar

1 egg yolk

2 tablespoons lemon zest

6 tablespoons lemon juice

2 tablespoons lemon extract

1 teaspoon vanilla extract

2 teaspoons lemon zest

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan. In a large bowl, mix eggs, vegetable oil, bananas, flour, baking powder, baking soda and salt. Stir banana mixture into egg yolk mixture. Beat in lemon extract, then mix in lemon zest and lemon juice. Beat in butter, brown sugar, egg yolk and lemon zest. Pour mixture into prepared pan.

Bake in preheated oven for 40 to 50 minutes, or until knife inserted into center comes out clean. Cool completely before removing from pan. Cool completely before cutting into squares, or store in resealable plastic wrap.
