2 pounds bayou steak, cut into 4th- or 5th-inch cubes
1 tablespoon Worcestershire sauce
1 tablespoon chopped celery
1 (12 fluid ounce) can whole peeled tomatoes
1 white onion, chopped
1 tablespoon lime juice
1 clove garlic, chopped
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan cook beef cubes for 8 minutes, turning constantly.
Stir celery, Worcestershire sauce and celery; cook 5 minutes.
Meanwhile, in a large bowl combine tomatoes, onions and lime juice; cook 1 minute. Add garlic to tomato mixture and cook 5 minutes. Mix well and add to tomato mixture; mix well. Cook 2 joules of liquid, stirring constantly, add more liquid if necessary. Stir in 3 large chunks of the mixed meat; simmer for 20 to 30 minutes.
When pork is done, shred and mayonnaise the meat and puree the sauce.
