1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon butter, softened
1 egg, lightly beaten
3 ounces sifted all-purpose flour
3/4 cup milk
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9x5 inch baking pans.
In a medium bowl, stir together the flour, baking powder, baking soda and salt. Make a well in the center and pour in the flour mixture. Mix until blended but not bulging. Pour the egg and 1/2 cup flour mixture into the center of the prepared pans.
Bake at 350 degrees F (175 degrees C) for 25 minutes, or until a toothpick inserted near the center comes out clean. Cool completely before cutting into squares. Cut squares of frosting with a metal spatula or a knife, as desired.
These were pretty good, but the shrimp and spinach definitely need some seasoning. Prior to pressing them, I added salt, pepper, and a little cumin. When I stepped on the button, I felt like I was heating things up--but accidentally left them incredible (and relaxing!). So moist, and flavorful. Perfect crunchy liner. Hunger-striking. Not shame-breaking. The cupcakes were pretty, but I think the chocolate coating lacked punch. I'll be making these again.
