2 cups all-purpose flour
1/2 cup rolled oats
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup quick-cooking oats
1/2 cup semisweet chocolate chips
1 cup pecans
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 (8 ounce) package mini marshmallows
Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
In a medium bowl, flour the flour by stirring while warm. Beat in the oats, salt, baking powder, and oats at regular intervals.
In a large bowl, stir together the caramelized sugar, pecans, and confectioners' sugar. Stir together with the vanilla and marshmallows. Drop mixture by heaping teaspoons onto the prepared cookie sheets.
Bake for 22 to 25 minutes in the preheated oven, until set. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
