7 tablespoons olive oil
2 onions, chopped
3 cloves garlic, minced
1 teaspoon distilled white vinegar
1/4 cup finely chopped celery
1/4 teaspoon salt
3 tablespoons water
2 cups sliced mushrooms
2 tablespoons Worcestershire sauce
2 tablespoons molasses
2 tablespoons ketchup
1 (12 ounce) can pickle relish
1 (8 ounce) can diced tomatoes with green chile peppers, undrained
4 ounces shredded sharp Cheddar cheese
Heat olive oil in a large pot and saute onions, garlic, and vinegar in 350 degrees F (175 degrees C). From that point, add the celery, salt, water, mushrooms, Worcestershire sauce, molasses, ketchup, tomatoes, cheese and relish. Allow to simmer for 10 minutes, stirring occasionally.
