1 cup finely chopped onion
1 cup chopped celery
1 cup finely chopped celery
1/4 teaspoon garlic peppercorn
1 teaspoon coarse salt
1 teaspoon ground black pepper
2 cups boiling water
1 cup white sugar
1 potato, diced
3 cups water
1 cup butter
1 tablespoon espresso powder
1 tablespoon coffee granules
1/4 cup brown sugar
In a medium saucepan, bring boiling water to a boil. Add onion and celery, stirring gently. Add garlic peppercorns and salt and pepper. Reduce heat to low to simmer; cover, reduce heat to medium, and simmer until vegetables are tender, about 1 hour. Add enough boiling water to reach 2 inches. Add sugar and potatoes. Bring to a boil; cover, reduce heat, and simmer gently for 3 minutes. Stir in boiling water and pour mixture into the pan with the juice and potatoes. Pour into cans with liquid sprayed on top.
