1 cup margarine, melted
2 tablespoons all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups white sugar
1 carrot, shredded
1 cup fresh spinach, chopped
1 cup milk
1 egg yolk
1/4 cup butter, softened
1 cup milk
1 (16 ounce) can coconut milk
Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll each cookie into a smooth circle about 3 inches in diameter. Press halves onto the prepared cookie sheets, creating a 2 ounce circle.
Bake for 8 minutes in the preheated oven, or until golden brown. Remove from oven and brush with egg and cheese glaze; refrigerate.
