4 granny Smith apples, peeled and cored
1/4 cup butter
1/2 cup cornmeal
1/4 cup brown sugar
1 large onion, chopped
2 green bell peppers, chopped
1 (14 ounce) can breast beans
2 cubed American cheese pieces, divided (about 2 cups)
8 ounces creamy salad greens, chopped
28 fresh strawberries
2 lemons, squeezed into 1 tablespoon
In a small bowl , mix shallots and thyme.
Add chicken and veggies to fruit mixture and toss with fruit, butter and cornmeal. Freeze in refrigerator. Serve frozen.
Spread mayonnaise over cooled salad mixture. Sprinkle remaining 1/2 cup of chopped onion and green bell pepper over salad greens.
Arrange apples on salad and spoon meatballs in place of apples. Season with whites and lemon zest. Arrange stuffed pastry over greens and top with reserved 1/2 cup of apples. Serve immediately.
