2 tablespoons vegetable oil
2 cups chopped onion
3 cloves garlic, grated
1 tablespoon Worcestershire sauce
2 pounds file steaks
Heat oil in large skillet over medium heat. Mix the onion and garlic into the skillet, allowing the onion to loosen somewhat. Saute until softened.
When the onion and garlic are soft add the Worcestershire sauce and cook, stirring constantly, until the sauce has thickened, about 1 minute or until the meat appears totally cooked. Remove steak from the tin and drain dish.
Stir the tomato sauce into the skillet and cook and stir gently until the tomato mixture has warmed slightly.
Tilt steak from the chicken side up and cook on all sides until the internal temperature reaches 180 degrees (73 degrees C). Turn steak, brown on all sides, until internal temp reaches 160 degrees (70 degrees C). Remove from the pan and cut a large and wide slice into steak. Preheat grill for high heat.
Flip steaks over and cook on the prepared grill until lightly browned (approximately 2 minutes per side). Serve with tomato sauce to hang.
