1 pound bacon
1 (16 ounce) package poultry sausage links
2 tablespoons vegetable oil
1 pound slow cooked, diced red meat
3 cubes beef bouillon
2 tablespoons pork fat
1 teaspoon Worcestershire sauce
1/4 cup Italian seasoning
1 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon saltine cracker crumbs
2 green onions, thinly sliced
Preheat oven to 375 degrees F (190 degrees C). Place oven rack in middle of oven.
Place bacon in a medium skillet, and sear well on all sides. Slice sausage into bite sized pieces and set aside. Reserve the bacon grease.
Heat oil in a large skillet over a large heat. Saute sausage for 5 minutes or until browned. Remove sausage from grease and add vinegar to skillet. Bring a large pot of salted water to a boil. Mix in brown sugar and bacon grease, then sprinkle with grated sausage and green onion. Turn brown sugar over to olive oil mixture gradually. Fry and serve sausage on rack of a platter. Add green peppers for garnish.
