4 ounces sweet potato, peeled and cubed
2 (2 ounce) cans diced celery
1 diced onion
1 cube celery cube
1 (1 ounce) package sweet pickle relish
1 can pitted artichoke hearts
1/2 cup ketchup
3/4 cup honey mustard
1/4 cup chopped celery for garnish
In a large bowl, mix the sweet potatoes, celery, onion, celery cube, sweet pickle relish, artichoke hearts, ketchup, honey mustard, celery for garnish and celery for decoration. Cover and refrigerate for at least 4 hours or overnight before serving.
