1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 eggs, beaten
1/2 cup vegetable oil
1 cup white sugar
1 1/2 cups vegetable oil
1 teaspoon vanilla extract
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine flour, baking powder, baking soda and salt. Mix well. Stir in cinnamon, eggs, oil and sugar until evenly blended.
In a small bowl, combine vegetable oil, white sugar, oil, milk, cinnamon and vanilla until thoroughly combined. Stir into flour mixture just until just blended. Fold in whipped topping and optional garnish with sprigs of lemon zest.
Arrange cake in a medium baking sheet. Bake in preheated oven for 45 minutes, or until a toothpick inserted into the cake comes out clean. Cool completely in pan and cut into squares.
I thought this was amazing! It was my first study of an Indian menu and all that charcoal smoke and stew was wonderful! It was so tender and flavorful! I wish we had bought more than 1 1/2 cokes of milk to add at the beginning of the meal.
