1 (15 ounce) can sliced peaches, drained
1/2 cup white sugar
1 (16 ounce) package lemon flavored Jell-O mix
6 tablespoons cold water
1 teaspoon vanilla extract
1 (16 ounce) can frozen crushed pineapple, thawed
Place peaches in a large bowl. Stir in sugar, jelly, and water; stir until fully dissolved. Stir in gelatin. Using your hands, mix gelatin mixture with 1/2 cup peach slices. Pour mixture into medium bowl. Stir in lemon gelatin mixture with a spoon or syringe; mix thoroughly. Fold lemon mixture into gelatin mixture. Cover loosely. Chill in refrigerator or overnight to firm peaks.
Melt 1 cup lemon gelatin in medium saucepan over low heat. Stir in pineapple pieces; simmer over medium heat 2 to 3 minutes, stirring occasionally. Serve with lemon jelly and peaches jelly, if desired.
