1/4 cup butter, softened
3 tablespoons lemon juice
1 3/4 cups lemon-lime flavored carbonated beverage
1 8 ounce can sliced citrus fruits, drained
1 1/2 cups sliced figs
1/4 cup chopped green onions
1 cup fresh whipped cream
2 tablespoons condensed carrot soup
1/3 cup crushed pineapple with juice
1/2 cup sliced almonds
3 tablespoons cornstarch
Heat oil in deep-fryer. Stir in lemon juice and lemon-lime soda, and deglaze skillet or pan.
Bake 12 to 15 minutes, or until chicken and veggies are heated through. Remove to paper towels; cool. Cover, and cook until cooked through and no longer pink. Stir in cream, carrot and rice vinegar. Remove from heat; stir in lemon juice, pineapple, almonds, cornstarch and citrus fruits. Cook 20 minutes, stirring frequently.
