Blacksmith's Potatoes Recipe

Ingredients

1 (15 ounce) can black potatoes, drained

3 tablespoons olive oil

1 onion, chopped

1/2 teaspoon salt

1 clove garlic, minced

1 (8 ounce) package dry French onion soup mix

1 (6 ounce) can whole peeled tomatoes, chopped

1 (3 ounce) package tomato paste

12 potatoes, peeled and sliced

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a small saucepan over medium heat, heat oil and saute onions in olive oil until translucent. Stir in salt, garlic, soup mix and tomatoes until well blended. Stir in potatoes and cook until lightly browned.

Spread potatoes on the bottom of a 7x9 inch baking dish. Layer with sauce mixture and tomato paste. Cover and bake uncovered in preheated oven for 45 minutes.
