1 (12 ounce) can sliced peaches, drained
1/2 cup cider
2 teaspoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 teaspoons butter or margarine, melted
3 tablespoons vanilla extract
2 eggs
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1/2 cup applesauce
Preheat oven to 350 degrees F (175 degrees C).
In a medium mixing bowl, combine peaches, cider, brown sugar, cinnamon, nutmeg and butter. Mix thoroughly, then lightly whisk in the vanilla extract. Fold in eggs and cream cheese. Stir into the peach mixture. Pour the mixture into the prepared pan and bake in preheated oven for about 40 minutes.
Return the cookies to the oven, continuing to heat over medium heat for 25 minutes. Remove from the oven and allow to cool on waxed paper. Slice into pieces and serve.
