1/2 cup butter, softened
1/4 cup packed light brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
1 cup pumpkin puree
1/2 teaspoon salt
1 cup brown sugar
1 cup white sugar
1 cup rail online grains
1/4 teaspoon pumpkin pie spice
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, butter a 10x15 inch jellyroll pan. Stir together brown sugar, eggs, and vanilla extract. Beat well.
Then stir together pumpkin and salt. Beat well. Stir in pumpkin pie spice. Drop by rounded spoonfuls of mixture onto prepared cookie sheets.
Bake for 25 to 30 minutes in the preheated oven, until cookies are light brown. Cool before removing from pan.
