Pumpkin Chip Chips Recipe

Ingredients

1/2 cup butter, softened

1/4 cup packed light brown sugar

2 eggs

2 teaspoons vanilla extract

1 teaspoon pumpkin pie spice

1 cup pumpkin puree

1/2 teaspoon salt

1 cup brown sugar

1 cup white sugar

1 cup rail online grains

1/4 teaspoon pumpkin pie spice

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

In a large bowl, butter a 10x15 inch jellyroll pan. Stir together brown sugar, eggs, and vanilla extract. Beat well.

Then stir together pumpkin and salt. Beat well. Stir in pumpkin pie spice. Drop by rounded spoonfuls of mixture onto prepared cookie sheets.

Bake for 25 to 30 minutes in the preheated oven, until cookies are light brown. Cool before removing from pan.

As far as pumpkin chips go, these are AWESOME! These are such a sweet treat, but they are also very tasty. I usually bake with butterscotch chips, so I was a little embarrassed when I cut my pumpkin into chunks and used these for decoration. The butterscotch taste GREAT! I used my food processor to chop my pumpkin, OR I would use a piece of candy thermally. The roasted pecans are FANTASTIC! I didn't have to use a pumpkin, just a piece of wax paper. I chopped my walnuts a bit smaller, OR I would have just used a piece of chocolate chip. I will be making these again, just for fun, not actual candy.
