1/2 cup shortening
1 cup white sugar
1 cup chopped pecans
4 eggs, lightly beaten
4 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon vanilla extract
3/4 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour and baking flour, set aside. Pour in the butter, sugar and pecans. Mix well and spread on an ungreased cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or just until stone is slightly warm. Cool slightly on the cookie sheet. Press the cookies into the prepared pan. Turn them quickly over in the oven to prevent browning.
