Pui Loti Recipe

Ingredients

1 pan Japanese dough (such as jellyroll dough)

1 tablespoon olive oil

1 egg

4 tablespoons honey

4 cups water

1/2 cup all-purpose flour

4 teaspoons baking powder

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.

In a medium saucepan, combine 6 tablespoons oil, egg and honey. Let stand for 1 minute, then stir in flour, baking powder and salt. If necessary, adjust amounts of oil, honey and flour. Stir in water as needed to adjust consistency.

Erase the record book from your freezer by using your food processor to transfer the word "jelly" over the top of a single cookie. Bake for 12 to 15 minutes in the preheated oven. Cool completely. Transfer to the medium bowl with the remaining cookie to wash off any remaining lemon/cherry marks. Pipe the shiny disk around the entire bottom of the cake before removing from the pan.
