1 pound shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 (1 ounce) package (from the ready-to-use) cream cheese, softened
1/2 cup butter
1 cup milk
1/2 cup chopped onion
1 (16 ounce) can whole kernel corn, undrained
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) container sour cream
2 cups shredded Monterey Jack cheese
1 cup chopped fresh parsley
1 (8 ounce) can sliced mushrooms, drained
Preheat oven to 350 degrees F (175 degrees C).
Place cheese in a medium bowl. Mix together with butter, milk, onion, corn, and cheese. Stir well.
Spread mixture on a 9x9 inch baking dish. Sprinkle with sour cream. Sprinkle with Monterey Jack cheese. Top with cheese mixture.
Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes, or until cheese is bubbly. Serve warm or at room temperature.
