1 1/2 cups packed light brown sugar
2 cups light whipping cream
2/3 cup butter, softened
1/2 cup white sugar
1 tablespoon vanilla extract
1 tablespoon lemon zest
Preheat oven to 350 degrees F (175 degrees C).
Beat together brown sugar, whipping cream, butter, sugar and vanilla until smooth. Stir in lemon zest. Pour mixture into prepared 9-inch pie pan.
Bake at 350 degrees F (175 degrees C) for 45 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake an additional 15 minutes. Cool completely before removing from pan. Serve warm.
