1/2 cup natural peanut butter
1/2 cup brown sugar
1/2 cup soy milk
1 teaspoon vanilla extract
1/4 cup honey
3 tablespoons lemon juice
1 egg
1 teaspoon apple cider vinegar
1 teaspoon lemon zest
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup crushed sunflower seeds
10 ripe bananas
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 loaf pans. Place peanut butter, brown sugar, soy milk, honey, lemon juice, egg, apple cider vinegar, lemon zest, salt, cinnamon and banana peel in large bowl, completely blending. Pour batter into prepared loaf pans.
Bake in preheated oven for 25 minutes, or until golden brown. Remove from oven and allow to cool before removing pan from pan. Cool completely on wire rack.
