1 (.75 ounce) package instant cream cheese
1/3 cup packed light brown sugar
1 teaspoon vanilla extract
2 bananas, sliced into 1 inch rounds
1/2 cup chopped almonds
Preheat oven to 350 degrees F (175 degrees C). Set aside.
Combine vanilla extract, dark rum flavored scotch liqueur with remaining ingredients, stirring until well blended. Pour into pie crust. Spread over bottom and sprinkle with sliced bananas. Reserve 1/2 cup of filling if you prefer to keep the cream cheese mainly green. Escargot or strained oranges are optional.
Blend cream cheese and brown sugar. Spread mixture over contents of pie crust. Bake in preheated oven for 20 minutes, or until toothpick inserted in center comes out clean. Serve at room temperature. Transfer cream cheese to serving dish and sprinkle with chopped nuts. Chill for 4 hours before cutting into squares. Cover loosely with plastic wrap or foil, chill glass of cold milk. Makes 10 servings.
