1 tablespoon olive oil
1 large onion, diced
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes
2 cups sliced mushrooms
1 cup bacon
1 pound ham hocks, cut into small pieces
1/4 teaspoon salt
1/2 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes
2 pounds diced ham
1/2 large Italian sausage, sliced
1 (16 ounce) can tomato paste
1 (6 ounce) can pineapple juice
1/2 teaspoon wine
Combine the olive oil, onion, oregano, rosemary, crushed red pepper flakes, mushrooms, bacon, ham hocks, salt, sage and 1/2 teaspoon rosemary into a blender or food processor or pellet blender and slowly blend until smooth.
Stir tomatoes, pineapple juice and wine into the blender or food processor or blender. Blend until smooth and serve with ham, sausage, tomato paste and pineapple juice.
